While I love a detailed & intricate cocktail recipe, sometimes, it’s not realistic to have all those items on hand. Whether your friends came over last minute, or you just need to grocery shop … I wanted to create a recipe that tasted like a fancy cocktail but was made with items you would typically have at home.
At the Summer of Rum festival (woohoo Big City Events!), I was recently introduced to Kōloa Rum, and loved the taste of it after enjoy one at their tasting. I then fell more in love once I found out it’s made in Kauai, Hawaii.
Without further ado… I created Kokolite, a refreshing cocktail without the calories and made with ingredients that may already be in your fridge!
*While pineapple juice is easier, I muddled my pineapple and it made for a tasty finish!
Oh, but that’s not all! In just a week I will be traveling to Hawaii! If you follow me on social media, I’m sure you have seen Bethany, my college roomie & fellow Disney goer/lover/fanatic. It has been almost a year since I have seen her and I’m soooooo excited to make the trek for a few days with her.
While I’m there, Bethany & I will be visiting Kauai to pay Kōloa Rum‘s distillery a visit. And… I will be a guest judge at Kauai’s Best Bartenders Contest!
