And…I’m still getting back on track. Life has been unbelievably busy — blogging events — that big girl job of mine — events — workouts — and some necessary down time when I can catch it! But #OMGardein is helping me out; and an easy way to start incorporating Meatless Monday.
Don’t get me wrong, I love me some meat. I have been running for 4-5 years and still — my favorite meal post long distance race is a cheeseburger, fried & a coke. Yes, I do it BIG. But, Meatless Monday not only allows your body to absorb some yummy plant proteins, but it is also good for the environment. Did you know that if every American did Meatless Monday weekly all year, it would be the equivalent to eliminating ½ million cars from the roadways? And I love Mother Earth — so I will help where I can!
Since I am trying to meal prep more — and easy combo of Gardein Turk’y Cutlets, yellow rice & veggies is easy and simple. Except for the cutlets (because these are super easy to prep; cooks from frozen in just minutes), I prepped everything in advance.
(because you and I both know I could eat the entire bag of yellow rice in one sitting)
After a quick prep of 15 minutes for my prep and #OMGardein! — hats off to the chef (haha, yay me!), this meal was pretty darn good! The Gardein Turk’y Cutlets were very tasty — just like meat. These cutlets are also vegan, kosher, and made with non-GMO soy and wheat, veggies and ancient grains — all that in one and I am pretty impressed!
Gardein also offers other meat-free goodies to continue the #OMGardein, like Crabless Cakes and Veggie Burger (you can find them in the freezer section at your local grocer)– I am looking forward to adding these into my meal planning mix & keep Meatless Monday an ongoing event!
Ooooh, I LOVE Gardein! Haven’t tried the turk’y cutlets yet, but definitely will soon. They look great!

Your rice looks super tasty. I love the sweetness peas add to a dish and this looks like a perfect combo of flavors and textures. And isn’t meal prepping so awesome? I’ve been doing it for maybe two months and can’t believe how much better I eat just because I don’t have an excuse to be eating last minute junk.
Meal planning is sooooo helpful! I’m doing decent at keeping up with it!
I had no idea Gardein used non-GMO soy and corn, I’ll have to try more of their products. The holiday roast looks like something I’m going to have to try soon. 🙂
Yes, the holiday roast was my top choice, but I didn’t come across is in the grocery store. They sure are tasty products!
