As I get myself back into the groove post NOLA vacay — the words quick & simple are music to my ears. Although meal prep is the easiest way to go, considering all the errands and catching up I did today, throwing together a couple quick meals for tomorrow is usually what happens.

overnight steel oats. Takes less than five minutes to prepare and so many ways to prepare! They’re actually too easy… in a mason jar, combine 1/4 cup of steel oats with 2/3 cup of boiling water, add your Truvia Nectar (instead of honey for sweetness), some coconut oil for oomph and maybe some dried fruit, keep in the fridge overnight — and voila!
