Summer is in full swing at the Seminole Hard Rock Hotel & Casino, and while inside those walls is full of live music, the sound of slot machines and the smell from the hotel’s amazing restaurant options — the summer tastes of Council Oak are the top attraction.

Council Oak has an array of new beverages: Rose Mojito, El Zocalo Margarita, Twisted Western, Raspberry Lime Fresher, Bourbon Brulee, La Pear, Pillow Talk, Garden Party. It is no surprise that the El Zocalo Margarita was my favorite; and the Rose Mojito is picturesque. So pretty…with a petite rose frozen in the circular ice cube.

We were able to taste so many delicious bites, entrees & dishes. A few of my favorites were the Crispy Calamari, Heirloom Tomato Salad, and Grilled Corn. Calamari is always welcome on my dinner plate and these were just perfectly crisped and had great flavor. The Heirloom Tomato Salad is light & fresh, perfect for a starter.

Other new summer dishes include: , Garlic-infused Tomato Borsht & Toasted Ciabatta and Tuna Tartar.

Last but not least… their Baked Alaska. Using the art of fire, the marshmallowy outer is lightly crisped; once broken open, it reveals a light brownie cake and ice cream — yes please! While I do not have a big sweet tooth, this might have been my favorite part of the meal (besides the El Zocalo Margarita).
